Woodlands-based Crust Pizza Co., known for its Chicago-style pizza, plans to open its first San Antonio restaurant in Stone Oak.
Construction on the 2,702-square-foot space at 20135 Stone Oak Parkway, Suite 130, is expected to start in November and finish by May 2027, per project details filed with the Texas Department of Licensing and Regulation. Costs to finish the interior buildout of an existing retail shell are estimated at $400,000.
The Texas pizza chain is slated to join the growing tenant lineup at Stone Oak Mercantile, a 57,673-square-foot retail center under construction at the intersection of Stone Oak Parkway and Canyon Golf Road.
Stone Oak Mercantile's other confirmed tenants include Box St. All Day, Paris Baguette, Black Rock Coffee, JetSet Pilates, The Gents Place and Swish Dental, Ryan Bader with Fulcrum Development, the project's developer, said.
Plans for this location come as Crust Pizza is working to grow its footprint in and around the Alamo City. In September 2025, the chain opened a location in Cibolo at 813 Cibolo Valley Drive.
Houston-based franchisees Derek Campbell, Nathan Robbins and Jay Tompkins serve as the operators of the site.
Tompkins told the Business Journal in a past interview that the trio agreed to open three San Antonio-area restaurants. The Stone Oak eatery marks the second in the pipeline. He also said the Boerne area was being considered for the third location.
"We would be happy to do more. We'll see once we get past three. If the franchise owner wants to sort of make us exclusive for San Antonio or wait on us, that's fine, but there may end up being another franchisee or two," he said.
Crust Pizza CEO Carl Comeaux said the company aims to open eight to 10 San Antonio locations over the next three to four years. Other areas of the city being considered include Potranco, Highway 211, Alamo Ranch and Highway 90.
"I think for us, San Antonio fits who we're looking for. We want to be known as the local pizzeria in your neighborhood where we're within two to three miles of your house, where it's convenient for you to dine in or it's also convenient for you to take it out," Comeaux said.
Startup costs for a Crust Pizza franchisee include an initial franchise fee of $50,000. Comeaux said the remaining costs range from $766,000 to $1.4 million, with most stores costing an estimated $850,000.
Each location employs approximately 35 to 40 people, with about five being full-time.
Crust Pizza was founded in 2011 and has since opened more than 35 locations across Texas and Louisiana.
